1/2 cup Hihi Estate Extra Virgin Olive Oil
3/4 cup whole milk yogurt
1/4 cup lime juice
Zest of 3 limes
3/4 cup white sugar
1 1/2 cups self raising flour
1/2 tsp salt
Preheat oven to 175°C. Line a 24cm springform cake tin with baking paper.
Briefly whisk; oil, yoghurt, eggs, lime juice & zest in a mixer bowl to combine.
Add the sugar, stirring to combine.
Whisk in flour and salt.
Pour batter into cake tin. Bake 40 minutes or until golden or until a toothpick inserted into the centre of the cake comes out clean.
Leave in the tin for 10 minutes then turn out onto a cooling rack.
This is an easy, yummy cake. Dust with icing sugar & serve with a dollop of yohgurt.
