600g wholegrain rolled oats
2 Tbsp ground ginger
2 Tbsp cinnamon
2 Tsp sea salt flakes
800g mixed nuts and seeds of your choice
200ml Hihi Estate Extra Virgin Olive Oil
100ml of sweet syrup of your choice – ginger, maple, date, etc.
A cup or two of dried fruit – diced apricots, blue berries, cranberries, etc.
Method.
Preheat oven to 160C.
Line two large low sided baking trays with baking paper.
Put oats in a large bowl & toss through the spices.
Add nuts, seeds and salt flakes – mix through.
Pour over combined Extra Virgin Olive Oil and syrup – stir through with a wooden spoon or your hands.
Spread mixture across the baking trays and bake for 30 minutes.
Remove from oven stir and bake a further 10 minutes.
Remove from oven, fold in fruit and bake a further 10 minutes.
Remove from oven, transfer all Granola to a large deep sided baking pan and stir through occasionally as the mixture cools. This will avoid any clumps forming.
Notes:
This recipe makes a large portion simply because it gets eaten so fast that making a smaller portion seems futile. It’s so delicious you may want to hide it.
Whole almonds, flaked almonds, pepitas and sunflower seeds go well. Black & white sesame seeds give a pleasant nutty background and flax seeds do wonderful things to pretty much every part of your body. Just use your favourite nuts & seeds
