King Fish Sashimi
Doubtless Bay Kingfish Sashimi

500g fresh Doubtless Bay Kingfish

2 spring onions, white part only – finely sliced

2 red chillies – finely sliced

Mint leaves – small bunch chopped or torn

1 lime

100ml Hihi Estate Extra Virgin Olive Oil

Flakey sea salt and fresh ground pepper

Method.

Thinly slice the kingfish, approximately 5mm – arrange on a platter

Season with the salt & pepper

Scatter over the spring onions & chillies

Drizzle the olive oil across the platter

Garnish with the mint leaves

Squeeze the lime over the platter sparingly

Notes:

This dish needs to be assembled and served immediately while the textures and colours are vibrant and before the lime juice has the opportunity to cook the Kingfish.
